British Chicory is at its  best  and available from January to mid march
For many of us perhaps we  have never eaten or even prepared it.
So this month’s new vegetable to try is:-
Chicory
It’s a  good source of  Folic acid and Calcium  so it is ideal for a well balanced and varied diet during the menopause.
To Buy – choose  firm crisp white leaves but not with green tips as these can be bitter, store like lettuce in a perforated bag in the  fridge
To Cook -It may be simmered  once the outer leaves and base have been removed for about 15 minutes with a dash of lemon juice / braised, in a pan with butter after cutting in half or roast – drizzled with honey, delicious served with cheese sauce for an extra Calcium boost
Raw -   ideal for adding to salads with walnuts blue cheese and pears
all in  season now
